Three to four pounds of chicken, cut into eight parts
Olive oil
Salt and pepper
One-half cup of chicken broth or stock

Always rinse your chicken thoroughly in cold water and pat dry before preparing.  Rub olive oil over the chicken and all around the bottom of the baking dish.  Add salt and pepper to taste.  Place chicken parts in the skillet in a single layer, with breasts in the center and smaller pieces around them. Be sure the skin sides of the chicken are down. Bake chicken in a 450-degree oven for thirty minutes; then lower your oven temperature to 350 degrees and bake for an additional fourteen to fifteen minutes for every pound of chicken you are cooking.  Chicken is done when a meat thermometer, inserted into the meatiest part of the chicken breast reads 165 degrees.
